Dairy free Pesto Pasta

Basil is all you really need to make pesto. This is a quick and easy dish with only a few ingredients. Your family will want to see this dish on the dinner table again and again.

Ingredients

  • 1 cup fresh basil
  • 3/4 cup raw cashews
  • 1 tsp olive oil optional
  • 2 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 1/4 tsp salt to taste
  • 1/4 tsp ground black pepper

Instructions

  • Bring a large pot of water to a boil, and then cook the pasta of your choice (lentil, chickpeas, whole wheat). In this photo, I used edamme spaghetti. Follow the pasta package directions accordingly.
  • Add the basil, cashews, olive oil, garlic, nutritional yeast, lemon juice, salt and pepper into a food processor. Pulse until everything is ground into a paste. Stop every 2-3 minutes to scrape the sides as needed. You can add 1/4 tsp if the paste is hard to stir or blend.
  • Add the pesto sauce to the pot of pasta. Toss until evenly ditrubuted. Serve hot with a few leaves of basil for garnish.
