Energy Cubes

We are always on the go as a physician couple so we need snacks that we can grab and get out of the door. Unfortunately, many energy bars on the market are highly processed and filled with refined sugar. We decided to make our own plant based energy cubes at home that are good for snacks, breakfast, and even dinner! Sugars from dates and dried fruits are not refined sugar and make an excellent sweetener. We really enjoyed eating this and cant wait to make it again!

Ingredients

  • 1/2 cup Cashews
  • 1/2 cup Walnuts
  • 1 1/4 cup dates
  • 1/4 cup dried coconut flakes
  • 2 tbsp whole flax seed
  • 1 tbsp dried hibiscus
  • 1 tbsp ginger
  • 1/2 lemon juice
  • 2 tsp Vanilla Extract

Instructions

  • Place nuts, dried fruit, and flax seeds into a food processor and blend until chopped up and combined
  • Add in rests of the wet ingredients until thoroughly fused
  • Form into whatever shapes that you prefer
  • Store in an airtight container in refrigerator

Notes

You can substitute dates with dried apricots
